CHICKEN AND DUMPLINGS 
1 hen
1 egg
Salt to taste
4 c. self-rising flour

Boil the hen in salted water until tender. Add enough water to make about 8 cups of broth. Remove chicken and add the dumplings slowly to the boiling broth. Cook about 5 minutes, sit off the stove and cover.

For the dumplings: Mix the 4 cups of flour, egg and 1 cup of hot water. Mix and roll out thin. Cut into small squares.
