PINEAPPLE - SPICE DROP COOKIES 
2 c. sifted all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. cloves
1/2 c. soft shortening
1/2 c. brown sugar, packed
1/2 c. white sugar
1 egg, unbeaten
2/3 c. (8 oz. can) drained, crushed pineapple

Heat oven to 375 degrees. Sift flour with baking powder, soda, salt and spices - two or three times. Mix shortening and sugar until creamy. Add unbeaten egg. Blend in pineapple, then flour mixture. Drop rounded tablespoons of dough 2 inches apart onto ungreased cookie sheets. (I use Teflon sheets.) Bake 12 to 15 minutes until lightly browned. Makes about 3 dozen.
