PINEAPPLE UPSIDE-DOWN HAM LOAF 
3 tbsp. butter
1/3 c. brown sugar
1 can pineapple slices
4 c. ground cooked ham
2/3 lb. ground raw pork
1/2 tsp. dry mustard
2 c. bread crumbs
2 eggs, beaten
1 c. milk
1/2 tsp. salt
1/8 tsp. pepper

Melt butter with brown sugar and place in bottom of 8x8x2 inch square pan. Place layer of pineapple slices on top of sugar mixture. Mix together remaining ingredients and spread evenly on top of pineapple. Bake at 350 degrees for 1 1/2 hours. Cut into squares to serve.
