LOW-CAL GINGERBREAD | |
1 c. flour 1/2 tsp. baking soda 1/4 tsp. salt 1 tsp. cinnamon 1 1/2 tsp. ginger 1/2 c. buttermilk or sour skim milk 1/4 tsp. nutmeg 1 egg 2 tbsp. dark brown sugar 1 packet sugar substitute 1/4 c. molasses 3 tbsp. melted butter Preheat oven to 350 degrees. Grease an 8" square pan. Dust lightly with flour. Sift together flour, soda, salt and spices. Beat together egg, brown sugar, sugar substitute and molasses until light. Add buttermilk and butter. Add the flour mixture, beat until smooth. Pour into pan; bake 35 minutes or until a cake tester comes out clean. Cool on cake rack. May be topped with whipped cream or Cool Whip. 35 calories per serving. Serves 12. |
