BAKED BUTTERY CHICKEN 
3 to 5 lb. whole baking chicken
1/2 to 3/4 stick butter
1 to 1 1/2 tsp. garlic salt
1/2 med. onion
Tops of 2-3 stalks celery
Poultry seasoning
Salt
Pepper
Paprika

Preheat oven to 325 degrees. Clean bird inside and out. Lightly salt inside cavity. Place 2-3 pats of butter in cavity. Place celery tops and cut-up onion (not chopped) inside cavity. Melt remainder of butter and garlic salt. Baste chicken with this mixture. Sprinkle chicken with pepper, paprika and poultry seasoning. Bake approximately 2 hours depending on size of chicken.

After first hour, baste with pan drippings every 15 minutes. Chicken is done when leg joint moves freely and meat on drumstick and thigh feels soft.
