ZUCCHINI ROUNDS (PANCAKES) 
1/3 c. Bisquick mix
1/4 c. Parmesan grated cheese (can)
1/8 tsp. pepper
2 eggs, slightly beaten
2 c. zucchini, shredded (with peel)

Mix Bisquick, cheese and pepper together in medium bowl. Add eggs to Bisquick mix and stir to moisten ingredients. Fold in zucchini to Bisquick mix.

Drop mix into greased skillet by tablespoonful, fry until golden brown on each side. These are as good as delicious potato pancakes.
