ZUCCHINI BREAD | |
3 eggs 1 c. salad oil 2 1/2 c. sugar 2 c. grated raw zucchini, unpeeled 2 tsp. cinnamon 1 tsp. baking soda 1 tsp. salt 1/4 tsp. baking powder 3 c. unsifted flour 1 c. chopped nuts Beat eggs until foamy, gradually beat in oil and sugar. Add grated zucchini, cinnamon, salt, baking powder, baking soda, mixing well. Blend in flour, mixing well. Fold in chopped nuts. Pour into greased 3 quart bundt pan and bake at 350 degrees for 1 hour or until done. Cool in pan 10 minutes, shake loose and turn out on rack to cool. Very good sliced and spread with soft cream cheese. |
