BLACK-EYED PEA CASSEROLE | |
1 lb. ground beef, browned and drained 1 c. cornmeal 1/2 c. flour 1 tsp. salt (omit if meal and flour are self rising) 1 tsp. baking soda (omit if meal and flour are self rising) 1 c. cooked black eyed peas (can be canned) 3/4 c. cream style corn 2 eggs 1/2 c. cooking oil 1 c. buttermilk 1 lg. finely chopped onion 2 hot peppers, finely chopped (optional) 8 oz. grated Cheddar cheese (save a little for the top) Brown the ground beef in a skillet; drain. Mix all other ingredients in a large, sort of deep casserole dish or anything that can be put into the oven. Add the ground beef. Sprinkle the top with the reserved grated cheese. Bake at 350 degrees for 45 minutes. Casserole should have the consistency of cornbread dressing. Let set a few minutes before serving. Serves 6. |
