CHILI CHEESE RICE 
1 c. chopped onion
1/4 c. butter
1 c. creamed cottage cheese
1/2 tsp. salt
1/4 tsp. pepper
3 (4 oz.) cans green chilies, drained & chopped
4 c. cooked rice
2 c. cheddar cheese

Saute onion in butter. Mix remaining ingredients except cheese. Spoon rice 1/2 of mixture into a greased 2 quart casserole. Top with 1 cup cheese then another layer of rice and top with remaining cheese. Bake at 350 degrees for 25 minutes.
