CHEESE AND CHILI RICE 
1/4 c. butter
1 c. chopped onion
4 c. rice, cooked
1 c. yogurt or sour cream
2 c. cottage cheese
1/2 tsp. salt
1/8 tsp. pepper
1 bay leaf, crushed
2 c. sharp Cheddar cheese
2 or 3 sm. cans green chili

Combine ingredients except Cheddar and chili. Layer half the combined ingredients in bottom of 9 x 13 inch casserole dish. Layer half of green chili over top. Layer half of Cheddar chili. Repeat, ending with Cheddar. Bake at 375 degrees for 25 minutes. This can be made ahead and refrigerated. If you do, bake 10 to 15 minutes longer.
