CHICKEN BREASTS WITH CHEESE &
CHILIES
 
4 boned & skinned chicken breast halves (1 1/2 lbs. total)
1 c. shredded Jack cheese
1 (4 oz.) can diced green chilies
1/2 c. chopped green onions
4 slices cooked crisp bacon, crumbled
1 med. avocado
1 c. sour cream

Lay breasts in 8"x12" pan, cover with foil. Bake at 350 degrees for 15 minutes. Meanwhile, mix cheese and chilies. Cover each breast, patting in place. Sprinkle green onion and bacon over chicken. Return to oven and bake uncovered 10 to 15 minutes. Scatter avocado over top. Serve with sour cream to taste. 4 servings.

Serve with following rice recipe: 1 red pepper 1 Spanish onion 1 garlic clove 1 1/2 c. chicken broth 2 tbsp. butter 1 tsp. ground cumin 1 1/2 c. long grain rice
