FROZEN GRAPE JELLY
3 c. non-sweetened grape juice
1 tbsp. lemon juice
1 pkg. (1 3/4 oz.) powdered fruit pectin
4 1/4 c. sugar

1. Place grape juice, lemon juice and pectin in a 3 quart casserole. Cover loosely with lid or plastic wrap. Microwave on high for 10 to 12 minutes or until mixture comes to a full boil. Stir occasionally during cooking.

2. Stir in sugar until dissolved. Cover, microwave on high for 6 to 8 minutes or until mixture again comes to a full boil. Stir occasionally during cooking.

3. Uncover, microwave on high for an additional 1 to 2 minutes or until jelly sheets from spoon.

4. Skim. Pour into hot sterilized jars. Seal, freeze up to 1 year or refrigerate for 2 to 3 weeks. Yields: 5 (8 ounce) jars.

Since microwave ovens vary in power, you may need to adjust your cooking time.
