VEGETABLE QUICHE | |
2 tbsp. butter 2 lg. onions, sliced 1 clove garlic, crushed 3 med. tomatoes, peeled or 1 can tomatoes 1 zucchini, sliced 2 tbsp. chopped parsley 1/2 tsp. basil 1/4 tsp. salt 1/8 tsp. pepper 2 tbsp. Parmesan cheese, grated 3 eggs 1/4 lb. cheese, grated (mild Cheddar or Jack) 1 unbaked pastry shell Saute onions and garlic in butter. Stir in tomatoes, zucchini, parsley, basil, salt and pepper. Simmer 10 minutes. Cool. Sprinkle pastry shell with Parmesan. Blend beat eggs in cooled vegetable mixture. Pour veg-egg mix in pastry shell. Sprinkle grated cheese on top. Bake 25-30 minutes at 400 degrees on cookie sheet until top puffed and brown. |
