EVERY READY MUFFINS | |
5 c. flour 2 c. sugar 5 tsp. baking soda 2 tsp. salt 10 oz. Raisin Bran cereal Add extra handful of raisins 4 eggs 1 c. cooking oil 1 qt. buttermilk (we use low-fat) In a large brown (double) paper bag combine first 6 ingredients. In a large bowl mix egg, oil, and buttermilk. After both are combined separately then mix dry and liquid ingredients together. Mix well. This mixture can be kept in the refrigerator for at least a week in covered container. Do not STIR once mixture is in refrigerator. This makes 4 dozen muffins. Fill 2/3 full in well greased muffin tin. We do not grease but use baking cups. Bake for 20 minutes at 350 degrees. Yummy! |
