1 (15 oz.) box Raisin Bran cereal 5 c. all-purpose flour 1 1/2 tbsp. pumpkin pie spice 4 beaten eggs 2 tbsp. vanilla 4 tbsp. Oat Bran (opt.) 2 c. granulated sugar 5 tsp. baking soda 2 tsp. salt 1/2 c. melted shortening & 1/2 c. melted butter or 1 c. oil 1 qt. buttermilk Mix cereal, sugar, flour, soda, spice and salt. Add eggs, shortening, butter, vanilla and buttermilk. Mix well and store in covered container in refrigerator. Fill enough muffin tins 2/3 full as you need at a time. Bake in preheated 400 degree oven for 15 to 20 minutes. Batter will keep in refrigerator for 6 weeks. Makes 60 muffins. |
