FEATHER LIGHT PANCAKES 
2 c. all-purpose flour
2 tbsp. sugar
2 tbsp. baking powder
1/2 tsp. salt
2 eggs, lightly beaten
2-2 1/2 c. milk
2 tbsp. bacon drippings, melted
1/4 c. sour cream

In a large bowl combine flour, sugar, baking powder and salt. With a fork or your hands, mix ingredients to evenly blend. In a separate container mix eggs, 2 cups milk, bacon drippings and sour cream. Combine liquids with dry ingredients using a whisk to blend until smooth. Do not overbeat. Since flours are variable, add more milk, if necessary. Batter should be the consistency of rich eggnog.
