BEET PICKLES 
1 c. vinegar
1 c. water
1 c. sugar
Mixed pickling spice
Beets

Boil small beets until tender; drain. Combine 1/2 cup of the water the beets were boiled in vinegar, sugar, thimbleful of mixed spices tied in a bag and beets. Boil a few minutes. Pack in hot jars. Seal.
