BROCCOLI AND CHEESE CASSEROLE 
2 boxes frozen chopped broccoli
1 can cream of mushroom soup
2 eggs
2/3 c. mayonnaise
1 c. grated sharp cheese
2 tbsp. minced onion
Salt and pepper to your taste

Cook broccoli for 5 minutes. Mix together all ingredients; add broccoli and put in casserole. Top with Ritz cracker crumbs. Bake at 350 degrees for 45 minutes.
