BROCCOLI CHICKEN CASSEROLE 
4-6 chicken breast, boned and cut into 1 inch strips or chunks
4 bunches broccoli, cleaned and split into sm. pieces
1 c. mayonnaise
1 can cream of chicken soup
1/4 c. minced onion
1 sm. can black olives, sliced
Dash of Dijon mustard
2 c. grated cheddar cheese
Parmesan cheese
Cracker crumbs

Place broccoli in large casserole and cover with raw chicken. In a small bowl, mix mayonnaise, soup, onion, black olives, and 1 cup grated cheese.

Mix together well and pour on top of chicken and broccoli. Spread completely to edges. Top with remaining cheese, sprinkle with Parmesan cheese and cracker crumbs. Bake at 350 degrees for 1 hour. Serve with salad and garlic bread.
