CAJUN RED BEANS AND RICE 
4 slices bacon, chopped (sauteed)
1 onion, chopped
2 cloves of garlic, chopped
1/2 green pepper, chopped
1 lg. bay leaf
2-3 cans red kidney beans, drained
3/4 lb. smoked sausage or kielbasa
1 lb. ham, cut into sm. pieces
1 lg. can tomatoes
1 tsp. garlic powder
1 tsp. parsley
1 tsp. thyme
Pepper to taste and Tabasco sauce to taste

Saute the onion, garlic and pepper in the bacon fat. In 4 quart pan (or crock-pot) mix all ingredients together. Bring mixture to boil, then simmer at least 3 hours. Serve over rice.
