CHANTILLY POTATOES 
3 c. mashed potatoes
1/2 c. heavy cream
1/2 c. grated Swiss or Gruyere cheese
Salt
Pepper

Preheat oven to 350 degrees. Butter a shallow 1 1/2 quart baking dish. Spread the mashed potatoes in the baking dish. Whip the cream until stiff, fold in the cheese and add salt & pepper to taste. Spread over the potatoes. Bake for 25 to 30 minutes or until the top is delicately brown. Let stand a few minutes before serving.
