CANTALOUPE NUT BREAD 
1 3/4 c. all-purpose flour
1/4 tsp. baking soda
2/3 c. sugar
1 egg
1/2 c. chopped walnuts or pecans
2 tsp. baking powder
1/4 tsp. salt
1/3 c. shortening
1 c. mashed cantaloupe

In large bowl, mix flour, baking powder, soda and salt. Sift three times. Add nuts to flour mixture. In a separate bowl, cream sugar and shortening until light and fluffy. Add eggs and mix well. Add mashed cantaloupe and mix well. Add flour and nut mixture half a cup at a time. Pour into greased loaf pan and bake at 350 degrees about 50 minutes.
