CHICKEN MEXICAN (MAIN DISH) | |
1 tbsp. butter 1 med. onion, c hopped 1 sm. green pepper, chopped 1 lb. can tomatoes, chopped 1 c. chicken broth 1 tbsp. cornstarch 2 sm. cans mushrooms Prepared rice for approximately six servings 1/2 tsp. oregano 2 tbsp. parsley 1 tbsp. sugar 1/2 tsp. black pepper 1 tsp. chili powder 1 tsp. garlic salt 2 c. cooked chicken, chopped Saute onion and green pepper in butter. Add all other ingredients except chicken. Simmer until thickened. Add chicken and continue to simmer 15 to 20 minutes. Serve over rice. |
