BEEF PORCUPINES 
3 lbs. ground beef or chuck
1 c. rice
1 sm. onion, chopped
1 green pepper, chopped
2 big cans stewed tomatoes
Oregano, to taste
Sugar, to taste
Parsley flakes
Salt and pepper

Mix beef, onion, pepper, rice, salt and pepper together. Form into balls the size of a large egg. Place in a roasting pan. In a large bowl, mix stewed tomatoes, large can of water, sugar, oregano and parsley flakes in with the beef. Bake at 350 degrees for 2 1/2 to 3 hours.
