CHEESE AND SPINACH CRUSTLESS
QUICHE
 
4 eggs
1/3 c. half and half
1 1/2 c. grated Swiss cheese
1 pkg. cooked & drained chopped spinach
4 slices cooked & crumbled bacon
1 tsp. lemon juice
1/2 tsp. salt

Beat eggs with half and half until light and fluffy. Blend in cheese. Add remaining ingredients. Pour into greased 9" quiche/pie pan for the microwave. Microwave on Medium 10 to 13 minutes. Let stand, uncovered, 5 minutes. Cover with wax paper to help cook the middle.

Since microwave ovens vary in power, you may need to adjust your cooking time.
