CRUSTLESS CRAB QUICHE 
4 oz. thawed and drained crabmeat
4 oz. Cheddar cheese, shredded
1/4 c. chopped scallions
4 eggs (Eggbeaters count as protein)
1 c. evaporate skim milk
1/2 tsp. salt
1/2 tsp. powdered mustard
1/8 tsp. pepper

Preheat oven to 400 degrees. Spray 8-inch pie pan with Pam. Combine first 3 ingredients. Press into bottom of pan. Whip remaining ingredients and pour over mix. Sprinkle with paprika. Bake until set, about 30 minutes. 1 serving.

3 protein, 1/8 vegetable, 1/2 milk.
