MICROWAVE PEANUT BRITTLE | |
1-1/2 c. blanched peanuts 1 c. sugar 1/2 c. white corn syrup 1 tsp. baking soda 1 tsp. vanilla 2 tbsp. butter Use a glass or microwaveable quart bowl. Put the peanuts, sugar and corn syrup in bowl, stir well. Cook on high 4 minutes. Stir well. Cook 4 more minutes on high. Add 2 tablespoons butter and stir well. Cook 2 to 3 minutes on high until light gold color. Add 1 teaspoon baking soda and 1 teaspoon vanilla in that order. Stir well. Pour onto greased cookie sheet. Let cool until brittle. Break into pieces and store in Tupperware or air tight container. |
