MICROWAVE PEANUT BRITTLE 
1-1/2 c. blanched peanuts
1 c. sugar
1/2 c. white corn syrup
1 tsp. baking soda
1 tsp. vanilla
2 tbsp. butter

Use a glass or microwaveable quart bowl. Put the peanuts, sugar and corn syrup in bowl, stir well. Cook on high 4 minutes. Stir well. Cook 4 more minutes on high. Add 2 tablespoons butter and stir well.

Cook 2 to 3 minutes on high until light gold color. Add 1 teaspoon baking soda and 1 teaspoon vanilla in that order. Stir well. Pour onto greased cookie sheet. Let cool until brittle.

Break into pieces and store in Tupperware or air tight container.

Since microwave ovens vary in power, you may need to adjust your cooking time.
