PEANUT BRITTLE (MICROWAVE) 
1 c. raw Spanish peanuts
1 c. sugar
Dash salt
1/2 c. white corn syrup
1 tsp. vanilla
1 tbsp. butter
1 tsp. baking soda

Mix peanuts, sugar, salt, and syrup together. Microwave on HIGH (maximum power) for 6-7 minutes. Add vanilla and butter; continue cooking on HIGH 2-3 minutes. Mixture should be darkened.

Add baking soda and stir quickly. Quickly pour out on a lightly greased cookie sheet or aluminum foil square. Spread thin; let cool. Break into pieces.

Tips: Make same as above, substituting other nuts for peanuts (almonds, pistachio, macadamia, cashews, mixed nuts, pecan, walnuts, or your favorite nut brittle).

Since microwave ovens vary in power, you may need to adjust your cooking time.
