PEANUT BRITTLE (MICROWAVE) | |
1 c. raw Spanish peanuts 1 c. sugar Dash salt 1/2 c. white corn syrup 1 tsp. vanilla 1 tbsp. butter 1 tsp. baking soda Mix peanuts, sugar, salt, and syrup together. Microwave on HIGH (maximum power) for 6-7 minutes. Add vanilla and butter; continue cooking on HIGH 2-3 minutes. Mixture should be darkened. Add baking soda and stir quickly. Quickly pour out on a lightly greased cookie sheet or aluminum foil square. Spread thin; let cool. Break into pieces. Tips: Make same as above, substituting other nuts for peanuts (almonds, pistachio, macadamia, cashews, mixed nuts, pecan, walnuts, or your favorite nut brittle). |
