PEANUT OR CASHEW BRITTLE -
Microwave
 
1 c. sugar
1/2 c. white corn syrup
1 c. nuts
1 tsp. butter
1 tsp. vanilla
1 tsp. baking soda

Oven setting - high (100 percent power).

Combine sugar and corn syrup in 1 1/2 quart glass casserole. Stir to blend. Microwave, uncovered, 4 minutes, stirring after 2 minutes. Stir in nuts, microwave 3-5 minutes until mixture is light brown. Stir in butter and vanilla, blending well. Microwave 1-3 minute longer. Syrup will be very hot and nuts heated.

Add baking soda, stirring until frothy (1 minute). Turn mixture onto buttered baking sheet. Let stand 30 minutes to 1 hour. Break into bite-size pieces. Store in airtight container. Makes about 1 pound.

Since microwave ovens vary in power, you may need to adjust your cooking time.
