MEXICAN WEDDING COOKIES 
1/2 c. sugar
1 c. butter
1 tsp. vanilla extract
2 c. flour
1 c. chopped pecans
Confectioners sugar

In mixing bowl, beat sugar and butter until creamy. Add vanilla and flour and mix well. Pinch of a piece of dough and roll into 1 inch ball, pressing about 1/4 of a pecan in center of ball.

Bake on greased cookie sheet at 350 degrees until done, 12-15 minutes. While still warm, roll in confectioner sugar. Makes 2-3 dozen cookies.
