MEXICAN WEDDING COOKIES 
1 lb. butter
8 tbsp. sugar
1/2 tsp. salt
4 tsp. vanilla
4 c. sifted cake flour
2 c. chopped pecans
Confectioners' sugar

Cream butter, sugar and vanilla. Add flour and pecans; mix well. Roll into small balls. Bake on a cookie sheet for 1 hour in a 275 degree oven. Remove from oven and roll in confectioners' sugar. Yield: 10 dozen.
