MANGO BREAD 
2 c. flour
2 tsp. baking soda
1 1/2 c. sugar
1 tsp. vanilla
2 c. minced mangos
1/2 c. coconut
2 tsp. cinnamon
1/2 tsp. salt
3 eggs
1 c. oil
1/2 c. walnuts, chopped
1/2 c. raisins

Sift together flour, cinnamon, soda, salt and sugar. Combine remaining ingredients. Mix together and let stand 20 minutes. Bake at 350 degrees for 45 minutes in 13 x 9 x 2 inch pan or 60 minutes in a loaf pan.
