MANGO BREAD 
2 c. flour
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
1 1/2 c. sugar
1 c. vegetable oil
1 tsp. vanilla
3 eggs
2 c. chopped mango
1/2 c. coconut flakes
1/2 c. raisins

Peel mangos and chop.

Sift together flour, baking soda, cinnamon, salt and sugar. Add oil, eggs and vanilla to dry ingredients and mix. Fold in mango, coconut and raisins. Pour into 2 well greased loaf pans.

Bake at 350°F for 1 hour. Refrigerate after baking.
