LOW-FAT RICE PUDDING 
Combine 1 quart low fat 1% milk and 1/3 cup uncooked long grain rice in heavy saucepan. Bring to boil over medium heat. Reduce heat and simmer uncovered, stirring frequently, until rice is tender (30-35 minutes).

Whisk 1 large egg and 1 large egg white plus 1/4 cup sugar in bowl. Gradually mix in 1 cup of boiled milk and rice, then pour back to saucepan and cook over low heat, stirring constantly for 1 minute. Remove from heat and stir in 1/2 teaspoon vanilla.
