LOW-FAT RICE STUFFED PEPPERS 
6 peppers, clean and top for stuffing
1 lg. chopped tomato
2 c. boiled rice
2 tbsp. parsley
1 c. low-fat Mozzarella cheese
1/2 c. Romano cheese
Garlic, salt, and pepper to taste
1 (10 oz.) pkg. chopped spinach, thawed

Mix ingredients, rice and cheese together in bowl. Stuff peppers. Place in casserole and cover with tomatoes. Cover and bake at 350 degrees for 1 hour.
