BEEF RICE CASSEROLE 
1 1/2 lbs. ground beef
1 lg. onion, finely chopped
1/2 c. celery, chopped
3/4 c. raw rice (not instant)
1 (10 3/4 oz.) can cream of chicken soup
1 (10 3/4 oz.) can cream of mushroom soup
1 (16 oz.) can mixed vegetables
4 tbsp. soy sauce
2 c. water
Chow mein noodles (optional)

Brown ground beef with onion and celery. Drain fat. Add to other ingredients, except noodles. Put in a casserole. Bake uncovered at 325 for 1 1/2 hours. Cover with noodles the last 30 minutes if desired.
