LAYERED BEEF & VEGETABLE
CASSEROLE
 
1 1/2 lb. ground beef
1 c. sliced onion
1 c. chopped green pepper
1/2 tsp. salt
1 lg. sliced potato
1 c. thinly sliced carrot
1 (28 oz.) can tomatoes, mashed
1/3 c. long grain rice, uncooked

Saute beef, onion and green pepper until beef is brown. Drain fat. Add salt and mix well. Place sliced potatoes in bottom of 2 1/2 quart baking dish. Alternate layers of carrots, rice, meat. Pour mashed tomatoes over casserole. Bake at 350 degrees, covered for 2 hours.
