CANDIED SWEET POTATOES | |
6 to 8 sweet potatoes 1 c. light brown sugar 1 c. maple syrup 1/2 c. sugar 2 tbsp. butter 1/2 c. water Pinch salt Marshmallows (optional) Chopped pecans (optional) Boil sweet potatoes until almost tender. Drain and cool. Peel and slice into thick pieces. Make syrup of light brown sugar, maple syrup, sugar, butter, water, and salt. Boil slowly about 10 minutes. Cover bottom of large, shallow baking dish with half of the sweet potato slices. Cover with half of the syrup. Bake in 350°F oven about 1 hour, basting occasionally. A topping of marshmallows and pecans may be added before removing from oven. |
