MARINATED CORNISH HENS 
4 Cornish hens
1 tbsp. oil

MARINADE SAUCE:

3 tbsp. soy sauce
2 tbsp. honey1 tbsp. lemon juice
3 tbsp. teriyaki sauce
2 cloves garlic, sliced
Dash pepper
Dash ginger

1. Remove bags with liver and neck from hens, wash well with cold water and then pat dry.

2. Rub hens with oil.

3. Place hens in glass bowl and pour marinade sauce over hens.

4. Let hens marinate overnight and turn 4-6 times during this process.

5. Remove hens from marinade and place on rack in roasting pan.

6. Roast hens at 400 degrees for 50 to 60 minutes, turning once during cooking time and basting with the marinade sauce.

7. When done hens should be fork tender and juices should run clear. Serves 4.
