DONNA'S CORNISH HENS 
2 Cornish hens

MARINADE:

1/2 c. soy sauce
1/2 c. orange juice
1/4 c. balsamic vinegar
1-2 tbsp. oil
2 green onions, minced (scallions)
1 lg. clove garlic, minced or pressed

Rinse hens and pat dry. (Can use chicken parts also.) Cut hens into halves from the center of back through breast. Remove excess fat and tails.

Combine marinade ingredients. Spoon some under the breast skin. Coat hens on all sides. Marinate at room temperature for 1 hour or covered in the refrigerator for 2 hours or more. Place pieces skin side down on broiling pan. Broil 6 to 7 inches from heat for 10 minutes. Turn and broil 10 minutes longer. Spoon remaining marinade over the hens. Bake at 350 degrees for 10 minutes.

Recipe is in fact very tasty. My only comment is to watch the temp on birds if marinating at room temp. Danger zones on Food that reaches 40 degrees and up especially poultry since the bacteria starts to double and grow at a faster speed.
