APPLE 'N CHEDDAR PIE 
2 c. apple slices
1/4 c. and 1 tbsp. sugar, divided
1/2 tsp. cinnamon
1 (8 oz.) cream cheese, softened
1 tsp. vanilla
1 egg
3/4 c. sharp cheddar cheese, shredded
1 ready graham cracker crust

In a large bowl combine apple slices, 1 tablespoon of sugar and cinnamon. Mix lightly. With an electric mixer, combine cream cheese, remaining 1/4 cup sugar and vanilla, mixing at medium speed until well blended. Add egg; mix well. Stir in cheddar cheese.

Pour cream cheese mixture into pie crust. Layer apple slices over top. Bake at 350 degrees for 35 minutes. Serve warm, at room temperature or chilled.
