SAUSAGE AND APPLE QUICHE 
9" pie shell
1/2 lb. mild Italian sausage, or breakfast sausage, thinly sliced
1/2 c. finely chopped onion or scallions
2 c. finely diced red Delicious apples
1/2 c. shredded sharp cheddar cheese
2 eggs, beaten
1 c. light cream
1/4 tsp. sage
1/8 tsp. freshly grated nutmeg

1. Preheat oven to 350 degrees.

2. Prebake pie shell 10 minutes.

3. Cook sausage with onion until brown. Drain excess fat.

4. Toss sausage and onion with apples and cheese. Spoon into shell.

5. Beat eggs with cream, sage and nutmeg. Pour into shell.

6. Bake until firm, 40 to 45 minutes. Let stand 5 minutes and serve. Serves 6.
