1 pkg. (10 oz.) frozen chopped spinach
2 tbsp. minced onion
1/2 c. milk
1/4 tsp. salt
1/2 c. soft bread crumbs
2 beaten eggs
1 c. shredded sharp Cheddar cheese
Dash of pepper
1 (3 oz.) can sliced mushrooms (optional)

Cook spinach for a few minutes. Drain well and drain mushrooms (if using). Combine all ingredients except bread crumbs. Turn into greased casserole and top with crumbs. Bake at 350 degrees for 1/2 hour or until a knife inserted comes out clean. You may bake it a loaf pan.
