BAKED HOT POTATO SALAD 
8 potatoes, cooked, peeled and diced
1 lb. soft American cheese, diced (Velveeta)
1 c. mayonnaise
1/2 c. chopped onion
Salt and pepper to taste
1/2 lb. bacon, fried and crumbled
1/2 c. sliced stuffed olives
2 tbsp. pickle relish

Toss potatoes, cheese, mayonnaise, onion and seasonings. Turn into buttered 13x9x2 inch baking dish. Combine bacon, olive and relish and spread over potato mixture. Bake at 325 degrees until thoroughly heated. Serve warm. Serves 8-10.
