BAKED ZUCCHINI CASSEROLE 
2 lbs. squash, cubed
3 tbsp. chopped onion
3 eggs, beaten
1/2 tsp. Tabasco sauce
2 tsp. parsley
Salt and pepper to taste

TOPPING:

1 c. cracker crumbs
1/3 c. butter

Cook squash for about 3 minutes; drain. Add other ingredients. Pour in buttered dish, then cover with cracker crumbs. Pour melted butter over top. Bake at 350 degrees for 35 minutes. You can mix melted butter with cracker crumbs if preferred. Serves 4-6.
