BAKED ZUCCHINI CASSEROLE 
1 1/2 lbs. zucchini, steamed, drained & mashed
3 eggs, beaten
1/4 c. olive oil
1 c. soda cracker crumbs
1 clove garlic, minced
1 bell pepper, chopped
1 c. Tillamook cheese, grated
Salt & pepper

Combine ingredients, reserving 1/4 cup cheese, and place in greased shallow baking dish. Top with reserved cheese. Bake at 350 degrees until firm, 30 to 40 minutes.

Serves 6 to 8.
