NO SHORTENING PINEAPPLE CAKE 
2 c. all purpose flour
2 c. sugar
2 tsp. baking soda
2 eggs, beaten
1 tsp. vanilla
1 c. chopped nuts
1 can (20 oz.) crushed pineapple, undrained

In a large bowl mix together flour and sugar, add remaining ingredients and mix well. Pour mixture into an ungreased 9 x 13 baking dish. Bake for 45 to 50 minutes or until a wooden toothpick comes out clean. Serve topped with fresh, canned or frozen fruit or Cream Cheese Frosting. (see below).

CREAM CHEESE FROSTING:

1 pkg. (8 oz.) cream cheese, softened
1 stick butter
1 1/2 c. confectioners sugar
1 tsp. vanilla

Combine all ingredients in a large bowl. Mix with electric mixer until smooth and creamy. Spread on cooled cake.
