APPLE NUT COFFEE CAKE 
Shortening
1 c. flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/8 tsp. salt
1/2 c. sugar
1/4 c. shortening, butter
1 egg
1/2 tsp. vanilla
1 lg. apple
1/2 c. sour cream (yogurt ok)
1/4 c. chopped nuts (optional)
1/4 c. brown sugar
1 tbsp. butter
1/2 tsp. cinnamon

Grease pan with shortening. In medium bowl, stir flour, baking powder, soda and salt. In large mixing bowl beat regular sugar and 1/4 cup shortening until fluffy. Beat in egg and vanilla until well mixed. Peel apple, remove core and chop apple into small pieces. Stir in 1/2 dry mixture. Stir in sour cream (or yogurt). Stir in the rest of dry mixture. Stir in chopped apple.

Spread evenly in 9 x 9 x 2 inch greased pan. Chop nuts. Mix in brown sugar, butter and cinnamon. Sprinkle over coffee cake. Heat oven to 350 degrees. Bake 25-30 minutes. Serve warm.
