APPLE-NUT COFFEE CAKE 
1 c. flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/8 tsp. salt
1/2 c. sugar
1/4 c. shortening
1 egg
1/2 tsp. vanilla
1 lg. apple
1/2 c. sour cream
1/4 c. nuts
1/4 c. packed brown sugar
1 tbsp. butter
1/2 tsp. ground cinnamon

Grease a 9x9x2-inch baking pan. In medium bowl stir together flour, baking powder, soda and salt. In large mixing bowl beat together sugar and the 1/4 cup shortening until fluffy. Beat in egg and vanilla until well mixed. Peel apple; remove core. Chop the apple. Stir about half the flour mixture into the sugar mixture. Stir in sour cream. Stir in the rest of the flour mixture. Stir in chopped apple. Spread evenly in greased pan.

Crush the nuts; mix in brown sugar, butter and cinnamon. Sprinkle over coffee cake. Bake in a 350 degree oven 25-30 minutes or until done. Makes 9-12 servings.
