FRESH APPLE NUT CAKE 
1 c. salad oil
3 well beaten eggs
1 c. chopped nuts
2 c. sugar
2 c. peeled, diced apples
3 c. flour
1 tsp. baking soda
1 tsp. salt
2 tsp. vanilla

Combine first 5 ingredients in a large bowl. Sift together flour, sod, and salt. Add to first mixture. Stir well and add vanilla. Bake in tube pan at 325 degrees for 60-90 minutes.

ICING:

1 stick butter
1 c. white sugar
1/4 c. evaporated milk
1/2 tsp. vanilla

Heat butter and sugar over low flame until melted. Add milk. Bring to a boil. Remove from heat and cool. Add vanilla and pour over cake.
